Salt & Vinegar chippies (chips/crisps/potato chips) are my absolute favourite salty savoury snack. Now that makers have swapped the old school vinegar for Apple Cider Vinegar, I’m even more in love.

But this recipe knocks their socks off and will have everyone at the table asking “did you make any more?”

Smashed Salt & Vinegar Potatoes

Ingredients
  • 6 New Potatoes – sized to suit each person
  • 1/2 cup White Wine Vinegar
  • Extra Virgin Olive Oil
  • Salt and Pepper to taste
Instructions
  1. Bring a saucepan of water to the boil and add 1/2 cup of white wine vinegar.

    Preheat the oven to 180 degrees

  2. Add the new potatoes and boil them until they are just soft.

  3. Place the potatoes on an oven dish and smash/squash with a heavy glass.

  4. Shake over some olive oil, salt and pepper. Bake for 20 minutes and turn over.

  5. Bake for another 15 minutes or so – until the potatoes are all crispy and golden brown.
