I’m not really one for a sweet breakfast but every now and then, when the kids are over … oh who the hell am I kidding – sometimes I want pancakes and fruit.

Ingredients
  • 1 banana
  • 2 eggs
  • 1 cup oats I use Uncle Tobys Ancient Grains
  • 2 scoops protein powder
  • 1/3 cup milk
  • 2 tbsp ground flaxseeds
  • pinch salt
Instructions
  1. Mix all the ingredients well. I cheat. I throw everything in the blender.
  2. Put a good non-stick pan on a medium heat. Add a sliver of butter to the pan. I make each pancake with around 2-3 tablespoons of mixture. Cook both sides and keep under a tea towel until they are all ready.
  3. Serve in a stack with .... chocolate peanut butter, yoghurt, fruit ... all the delicious things!
