I’m not really one for a sweet breakfast but every now and then, when the kids are over … oh who the hell am I kidding – sometimes I want pancakes and fruit.

Ingredients
- 1 banana
- 2 eggs
- 1 cup oats I use Uncle Tobys Ancient Grains
- 2 scoops protein powder
- 1/3 cup milk
- 2 tbsp ground flaxseeds
- pinch salt
Instructions

Mix all the ingredients well. I cheat. I throw everything in the blender.

Put a good non-stick pan on a medium heat. Add a sliver of butter to the pan. I make each pancake with around 2-3 tablespoons of mixture. Cook both sides and keep under a tea towel until they are all ready.

Serve in a stack with .... chocolate peanut butter, yoghurt, fruit ... all the delicious things!

YUM! I’m the same and prefer a savoury breakfast – but every once in a while I have a craving for something sweet and indulgent 😉
