Eggs are just so easy for breakfast. I love them fried (in coconut oil), scrambled and made into a sexy omelette.
And it’s that sexy wee omelette, all light and fluffy and bursting with flavour that I’m going to talk about today.
Ingredients:
- 1 egg
- 2 tablespoons protein rich/trim milk
- Salt & Pepper
- 1 tsp Olive Oil
… and this is where I am going to leave the rest of the list for you. I add things like 2 tsp chopped bacon, 1 tsp chopped red capsicum, 4-5 baby spinach leaves and a tsp of feta. But you can add what you like.
Mix up the egg, milk and salt and pepper. Set aside.
Add Olive Oil to a little saucepan.
I found mine in the kitchen section of the supermarket, its a little one egg pan and its bloody fantastic!
Throw your other ingredients in – minus any cheeses. Cook them until your bacon is crispy.
Preheat the oven grill.
Add the egg mixture and cook gently until the bottom is done – you’ll start to see the edges start to get beautifully browned.
Add the cheeses on top. Pop under the grill.
At this stage I try and position it so the handle is out of the oven, as mines plastic, and I throw a tea towel over it just to be sure.
Watch the magic happen. When its browned on top, whip it out and serve it up.
I added just a sprinkle of parmesan on top of mine and some Kick Ass Ketchup (from Well Fed) that I had made earlier.
Now I’m hungry.
