This must be said first … I’m not the best baker/chef. In fact, since I left school and the home economics room, I’ve baked twice. And one lot were Afghans – they don’t count.
I made these last night to have for breakfast this morning.
Taking Bronnie’s advice, I made them savoury and added some Italian herbs.
The first one wasn’t a success. It looked like something my cat …. well … it wasn’t good!
As I said on Instagram, there’s a reason Ken does all the pancakes on the weekend.
Oat Bran Pancakes
- 2 1/2 tablespoons Oat Bran
- 2 eggs
- 1 1/2 tablespoons Lite Cream Cheese (under 5%) fat
- 1 1/2 tablespoons Natural Greek Yoghurt
- 1 teaspoon Italian herbs – or Tuscan herbs
Lightly grease a non stick pan – wipe it over with a little oil.
Can be heated up the next morning. I had mine with some cream cheese and thin slices of ham!

They are delish .. but I got snapped out a little. The 2 1/2 tablespoons of Oat Bran is now obviously more than our daily allowance so I shouldn't eat them all in one day!
They do keep well in the fridge overnight between a piece of baking paper.
1T sweetener
2T Oat Bran
1 egg
Sprinkle Cinnamon
splash of vanilla (sometimes lemon) essence
2T Philly
makes one or two if i dont overmix it to soup lol
its a perfrct breakfast unless you burn or forget the sweetener like i did this morning lol
