Buffalo chicken wings are normally deep fried and covered in a sticky, sweet (but finger licking) sauce.
Most of the recipes are full of sugar and butter but we’ve found a way to remove those and leave all the flavour intact.  You can also still have the blue cheese dip!  Alternatively, use the Almost But Not Quite Ranch Dressing from the soon to be released Nurture & Nourish Cookbook.

The city of Buffalo even declared a Buffalo Chicken Wing day and its coming up … July 29th.

Buffalo Chicken Wings & Blue Cheese Dipping Sauce

With this adaptation, leaving the chicken in the marinade the night before removes the need for any crumbing or frying!

Ingredients
Chicken Marinade
  • 250 grams Chicken Wings
  • 1 tbsp Hot Sauce I love Kaitaia Fire
  • 1 tbsp Coconut Aminos
  • 1 tbsp Cider Vinegar
  • 2 tbsp Tomato Paste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/8 tsp stevia I recommend powder for this recipe
Blue Cheese Dip
  • 50 grams blue cheese; crumbled
  • 120 grams lite sour cream
  • 1/2 tsp dill
Instructions
For the Chicken:
  1. Combine all the chicken ingredients and marinade them over night (cover in the fridge).
  2. Preheat the oven to 180 degrees (celsius) and line a tray with baking paper.
  3. Spread the chicken wings on the tray and bake in the oven for 15 to 20 minutes, turning once.
For the Dip:
  1. Combine blue cheese, dill and lite sour cream.

Serve with celery and carrot sticks.
